Luna Bar reviews

Luna Bar

Now, Luna Bars does have more ingredients in them than LARABARs but they are really good and have a lot of variety. On the label of the bars, you might find Contains Traces of milk. It does NOT have milk in it. This basically means that the factory manufacture other products that have milk in them so they use the same equipments. However, the factories do clean their equipments before handling other products so it is usually safe and vegan.

Luna Bar totally blowed my mind. LARABARs does have fewer ingredients but as I said before, they all are made of dates so they taste quite similar. Luna Bar on the other hand takes you up and down the cycle of sinful good food that is healthy.

Lemon Zest

I am a die hard fan for lemon in dessert. I even plan to have a lemon cake on my wedding day. My mom said my childhood ambition was to sell lemonades. Yep. Lemon fan right here. This cake is zesty, tangie and lemony. It has a rice crispy treat with a layer of vanilla, lemon icing on the bottom. It's delicious and super filling.

Caramel Nut Brownie

I have not had a brownie in such a long time because it is not easy to find a vegan brownie where I live. However, this threat is ohhh soooooo good. It has a bar of thick, moist chocolate cake with a layer of caramel on the top, drizzled with more dark chocolate. And I have checked, their caramel is VEGAN !

Peanut Butter Cookie

Other than lemon, PB is my top soulful food. I love peanut butter. I used to eat them straight up from the jar. This treat has a rice crispy treat layer that is rich in peanut butter, sitting on top of a generous layer of vanilla peanut icing. Peanuts. Peanuts. Peanuts. If this does not turn you on, I don't know what will.


That will be it for today. I have been experimenting a lot of vegan foods as well as recipes for the holiday so stay tune !

Summer Smoothie Bowl with only 3 ingredients !


I N G R E D I E N T S

1 cup of frozen strawberries
2 large kiwi
a handful of goji berries
1/2 pack of The Lean Green Super Powder from Vivarise  (optional)

I N S T R U C T I O N S 

1. Freeze the strawberries over night.
2. Take them out in the morning to defrost while you slice the kiwi.
3. Throw the chopped kiwis into the blender and blend them for a while before you pour in the strawberries. 
3. After pouring the strawberries in, I added the Super Powder from Vivarise
4. Pour into a"mug bowl" and top it with more kiwis and some goji berries.

I was sent some samples a few months ago but to be honest I was quiet anxious to try them and also because I was traveling a lot so I had no time to play around with it in the kitchen. However, when I got back from a long vacation, I feel the need to detox and start fresh. (Lets face it guys, we all feel this way after a long trip) I decided to add some of the powder into my smoothie and oh my goodness gracious I cannot describe how amazing it tasted. You wouldn't get used to it at first but after the second or third bite, you will find yourself digging into the bowl like a mad person. The saddest part will have to be when your spoon hits the bottom of the bowl and you only have one spoon full left. That's the saddest part! I think it is probably 27 calories per pack and the ingredient are all amazing; like, kale, spirulina, chlorella, wheatgrass, bitter melon, barley grass, lemon and 4 other super food ingredients. It is dairy-free, gluten-free, soy-free, and vegan. I seriously recommend it. There are a lot of benefits to it and you can check them out here

Spring Chai Pudding

I N G R E D I E N T S

1 cup almond milk
1 medium Asian pear
1/4 cup cashews
1/4 cup chai seed

I N S T R U C T I O N S 

1. In a jar, pour 1 cup of almond milk and 1/4 cup of chai seed. Mix them together.  
2.Then leave it over night in the fridge or  leave in in the fridge for 20 minutes in the morning.
3. Peel and chop the pear into bite size pieces and also chop the  cashews into smaller pieces.
4. Add the pear and cashews into the jar. Enjoy !

Mango Nectarine Yogurt

I  G R E D I E N T S

3/4 cup Greek yogurt
1 small mango
3 nectarines

I N S T R U C T I O N S

1. Dice and cube the nectarines. Slice the mangoes to fine pieces. 
2. Measure out the yogurt and add them into a glass, or a bowl. 
3. Add in the mango and stir them around. Mush the mangoes with the yogurt so that they are all equally combined.
4. Top it with nectarines.

NOTE: You may also add granola, nuts and seeds if you like as the topping.

I really enjoy a nice healthy bars, and Pure Bars are definitely one of my favorite since they are vegan and made with organic pure ingredient. When I found out that they are going to publish a cookbook, my heart floated into the air and my little fingers cant wait to get my hands on them. They were very generous to send me an advance copy.

The book is utterly beautiful and simple. The recipes are easy to make and everything on it is purely what you can find in your grocery market during the season. I love that they organized the book by season because lets face it, we cant find winter squash in may. She puts together what is in season and creates utterly mouth watering recipes. Its cleaver to buy in season as well since its a lot cheaper and the products are at their best.

Recipe I adore in this book are:



Raw Chocolate Chip Cookies


I N G R E D I E N T S

1 cup pitted dates
3/4 cup raw cashew
3.4 cup raw walnuts
1 1/2 tablespoons coconut oil
1.2 teaspoon sea salt
1 teaspoon vanilla extract
1/4 cup cacao nibs

I N S T R U C T I O N S

1. Add the pitted dates in a food processor and blend it till it's well chopped.
2. Add the rest of the ingredients till it's all nicely combined and smooth.
3. Add the cacao nib last and pulse to combine.
4. Use your hands or a spoon to ball out roughly 10 balls of cookies.
5. Leave them in the fridge for a more firm and solid treat or if you are like me, have them straight up. :)



Eggplant Bruschetta


I N G R E D I E N T S

2 medium eggplant
sea salt
black pepper
3 tablespoon olive oil
2 medium tomatoes
1/2 small yellow onion
10 basil leaves
1 teaspoon balsamic vinegar
garlic

I N S T R U C T I O N S

1. Peel the eggplants and slice them to 1/4 inch thick.
2. Arrange them on a baking dish and season with sea salt. Let them sit for 20 minutes
3. In a small bowl, combine 2 tablespoon of olive oil, tomatoes, onion, basil and vinegar. Season with salt and pepper
4. On a hot skillet, add in the patted dry eggplants and cook until they are soft and brown.
5. When done, transfer them onto a plate and top with the tomato mixture. Season with salt and pepper and sprinkle some balsamic vinegar.

As you can see, they are all really simple, basic ingredients that you can find anywhere! It's also affordable and most importable delicious. This meal can make you feel like you were out in a 5 star restaurant! It's your own wonder in your kitchen.

As you all may know, I am obsessed with cookbooks since I have been following a healthy lifestyle for almost 2 and a half years now. This book flattered my heart and made my taste bugs dance. Eating healthy may be hard at first, but once you get into it, there's no turning back and you wouldn't want to. Eating healthy can be fun and exciting and this book definitely made the it a hundred times better. I know the worst part of eating healthy is giving up desserts. But really, you don't have to! This book shows you all the alternatives you could try that taste just as good or even better. You won't ever feel missed out, that's a guarantee. 



Dark Chocolate Almond Bark with Sea Salt

 I N G R E D I E N T S

1 c. melted cacao butter
1 ¼ c. cacao powder
1 tsp. coarse sea salt
1/3 c. agave nectar
1 ½ tsp. almond extract
1 tsp. vanilla extract
½ c. almond pieces

I N S T R U C T I O N  S

1. Line a 9x13" baking sheet with parchment paper or plastic wrap, allowing the paper or wrap to hang over the sides.


2. Place the melted cacao butter in a medium bowl and stir in the cacao powder, sea salt, agave nectar, almond extract, and vanilla extract. 

3. Mix until smooth. Pour the mixture into the lined pan and sprinkle the almond pieces throughout the pan. 

4. Place in the freezer until firm, about 15 minutes. 

5. Break the bark apart and store the remaining pieces in the freezer for up to 1 month.


Maple Banana Tiramisu Trifle

I N G R E D I E N T S

CREAM
1 c. cashews, soaked and drained
1⁄8 tsp. sea salt
1⁄4 c. almond milk
1⁄4 c. cold-brewed coffee or 1 tsp. coffee extract
1⁄4 c. maple syrup
1 tbsp. melted coconut oil
1 tsp. vanilla extract
1 tsp. lemon juice

CHOCOLATE SAUCE DRIZZLE
1 tbsp. cacao powder
1 tbsp. maple syrup
1⁄4 tsp. vanilla extract
3 bananas
11/2 tsp. cacao powder, for garnish

I N S T R U C T I O N S

To make the cream: Place the cashews, sea salt, almond milk, cold-brewed coffee, maple syrup, coconut oil, vanilla extract, and lemon juice in a blender and blend until very creamy.

To make the chocolate sauce drizzle: Whisk the cacao powder, maple syrup, and vanilla extract together in a small bowl until smooth. Transfer to a squirt bottle, if you have one, or leave in the bowl until ready to use.

To assemble the trifle: 
1. Cut each of the bananas into 3 even sections. 

2.Slice each section in half lengthwise (you will have 18 total pieces of banana). Place 2 of the banana sections in the bottom of a 33⁄4x41⁄4" trifle glass or ramekin. 

3.Repeat in a second glass or ramekin. 

4. Squirt chocolate sauce (or drizzle with a spoon) along the rims of the glasses all the way around, reserving some for garnish. 

5. Next, add enough cream to cover the bananas. Layer another 2 bananas sections on top, then the cream.

6. Stand up the remaining 10 banana sections vertically around the sides of each glass (5 per glass), then pour in the cream to the top. 

7. Gently sift cacao powder on top and garnish with a drizzle of chocolate sauce. 

8.Serve immediately or let chill in the refrigerator for 30 minutes or until ready to serve. Can be stored in the refrigerator for up to 3 days.

I love cookbooks, but I die for good healthy cookbooks with lots of picture. And this book is a promising good read! I am totally all over for it. The recipes are all simple and easy. They are fast but healthy. What more could you ask for? It's a brilliant book and you can tell the author had put in lots of effort into them. Its nicely organized and the pictures are to die for. Seriously, it was a bad thing to read them at midnight.

There's vegan recipes, there's gluten free ones, and there's pescetarian ones. Ahh, I could go on forever. Its a kind of book that you can trust to just flip to any page and have your dinner ready in just minutes with a  promising fine dine. My favorite would probably be the roasted vegetables with quinoa and baked sweet potatoes with vegetables.

This book also contain lots of healthy eating tips and food to keep you up at the game, staying healthy and fit. It taught me that eating healthy doesn't take much but just determination. Healthy eating is really simple, if only one is dedicated and I believe this book can be very educational to people who are interested or are beginning to eating healthy.

Fig and Walnut biscotti


I N G R E D I E N T S

1 3/4 cups whole wheat flour
3/4 cup packed dark brown sugar
2 tsp baking powder
3/4 tsp salt
3/4 anise seeds, chopped
3 large eggs
1 tbsp orange zest
1 cup dried chopped figs
1 cut toasted chopped walnuts

I N S T R U C T I O N S

1. Pre-heat oven to 325 F
2. Whisk together the dry ingredients.
3. In a separate bowl, whisk the eggs till fluffy and downs not fall off your spoon.
4. fold the eggs in the dry ingredients and add the orange zest.
5. Mix in the walnuts and dried figs.
6. Spread the dough on a baking tray and bake them for 25 minutes.
7. Let them cool for 10 minutes and reduce the oven to 300F
8. Slice the logs into 1/2 inch thick and arrange the slices onto a baking sheet.
9. Bake for another 14 minutes, flipping it half way through.

(Make 30)


Farro and Roasted Sweet Potato Salad


I N G R E D I E N T S

2 lb sweet potato
3 garlic cloves
olive oil
salt
pepper
1 cup farro
1 lemon
1/2 cup fresh drill
1/2 cup spicy sprouts

I N S T R U C T I O N S

1 Pre hear oven to 420 F.
2. Slice the sweet potatoes and lay them onto a baking tray with the garlic and drizzle them with olive oil.
3. Season with salt and pepper
4. Roast them for 30 minutes, flipping them once or twice along the way.
5. Place farro in a medium sauce pan and cover with 4 inches of water. Bring it to a boil then reduce them to a simmer until its tender for 30-35 minutes
6. For the dressing, mash 3 garlic cloves with a fork and drizzle it with lemon juice ans zest.
7. Add farro along with sweet potatoes, drill and sprouts and toss to combine.
8. season with salt and pepper.

As I have been experimenting with vegan lifestyle I came to wonder what is really vegan? So I got some advice from HealthyVeganLife.com and work with a few of the others vegan and healthy eaters to discuss this. Actually there are more types of vegan/vegetarian then we think we know. Vegan isn't about eating salads or drinking smoothies all day. It can be fun and interesting too. Now here's the difference between VEGANS and VEGETARIANS

VEGAN 


Veganism is a philosophy and compassionate lifestyle whose adherents seek to exclude the use of animals for food, clothing, or any other purpose. Vegans endeavor not to use or consume animal products of any kind.Vegans do not consume meat, eggs, milk, honey or any food that is derived from animals. They also do not use any animal derived products, e.g. fur, leather, wool, etc. Do not condone the use of animal testing.


VEGETARIAN


Vegetarianism is the practice of a diet that excludes meat (including game and slaughter by-products; fish, shellfish and other sea animals; and poultry). There are several variants of the diet, some of which also exclude eggs.Do not eat meat or fish. Some do consume dairy and some vegetarians consume eggs. Lacto-vegetarian: eating dairy products. Ovo-vegetarian: eating eggs. They do not eat gelatin or other animal by products.While vegetarians do not eat meat, most vegetarians do not mind using other animal-derived products, e.g. fur, leather, or wool.


Different types of Vegan/Vegetarians

Lacto-vegetarianism

People who adopt a lacto-vegetarian diet abstain from all meat products, including eggs, but continue to eat dairy products. The advantage to this form of vegetarianism is you’re less likely to develop a calcium deficiency due to the inclusion of calcium rich milk products.


Lacto-ovo vegetarianism

Lacto-ovo vegetarians avoid all meat but allow themselves to eat both dairy products and eggs. The inclusion of eggs and milk makes it easier to maintain calcium and protein levels and is, in general, an easier form of vegetarianism to adapt to, particularly if you eat out a great deal. 


Pescatarians

One of the least restrictive forms of vegetarianism is the pescatarian lifestyle where you avoid all meat products with the exception of fish. Many people don’t consider pescatarians to be true vegetarians since they allow themselves to eat seafood. They also consume dairy products and eggs.


Flexitarians

Flexitarian is a relatively new term for a type of “on and off” vegetarian who eats a basic lacto-ovo vegetarian diet with the addition of meat products on occasion.


 Raw vegan/Raw food diet

A raw vegan diet consists of unprocessed vegan foods that have not been heated above 115 degrees Fahrenheit (46 degrees Celsius). “Raw foodists” believe that foods cooked above this temperature have lost a significant amount of their nutritional value and are harmful to the body.
