Stir Fry Vegan Tofu Recipe || Healthy Eats

Stir Fry Vegan Tofu recipe 

INGREDIENTS
  • 1 block of firm tofu
  • Handful of asparagus
  • 3 baby carrots
  • 1 yellow bell pepper
  • 1 tomato
  • 1 tsp ground pepper
  • 1 tsp sliced ginger.(or more if you like some heat like me.)
  • 1 small red chili 

Instructions:
1. Grill your firm tofu with coconut oil/olive oil / sunflower oil in low heat. 
2. Add in the chopped asparagus and carrots first as they tend to take longer time to cook.
3. after the carrots had soften a little, add the tomatoes and bell peppers.
4. Season it with some pepper and salt.
5. for extra flavor, add some sliced ginger and chili
